This is a broad question,  almost along the lines of "what camera should I buy?".  You need to ask yourself what you intend to do with the computer.  Are you looking at travelling with a laptop and downloading photos to the hard drive or a portable hard drive as you go?   If so,  you need to consider weight,  cost,  screen size etc.   A website to look at is http://www.laptop.com.au which has some advice on these issues.

Software wise,  what do you intend using?   Photoshop?  Lightroom?   Check the system requirements for the software you have in mind and be careful that you have enough RAM to run the software.  eg;  Lightroom requires minimum 768mg RAM, so get at least 1 gig of RAM.

Regards hard drive space,  I wouldn't be stressing about getting a huge capacity built in hard drive.  These days you can get very small but high capacity pocket hard drives with USB 2.0 connectivity at prices which have tumbled in recent years.  I'm using Western Digital pocket hard drives which are about the size of a packet of cigarettes and have 320 gig, more than enough for extended travelling.
